Step 1
Preheat the oven to 170C. Line a 27 cm x 18 cm baking dish with baking paper.
Step 2
Place ½ cup of the rolled oats into a food processor and process until a rough flour forms. Place oat flour into a large bowl with the remaining rolled oats, rice bubbles, coconut, chia seeds and baking soda.
Step 3
Place the coconut oil and honey into a small saucepan. Heat over medium heat, stirring, until the mixture has melted and combined.
Step 4
Pour into the bowl of dry ingredients and mix well. Transfer into the prepared baking dish then press down firmly using the back of a spoon. This will help the bars hold together.
Step 5
Bake in the preheated oven for 15 to 20 minutes until golden brown all over. Remove from the oven and press down again with the back of a spoon to make it firmer.
Step 6
Cool on a rack for 10 minutes then score the surface into 12 bars with a sharp knife. This will help to cut the slice into perfect bars once it cools fully. Once cooled to room temperature, chill for 1 to 2 hours before fully cutting the bars.
Step 7
Drizzle with melted chocolate if desired. Store refrigerated in an airtight container.
