Our Wattie’s Baked Beanz Breakfast Wraps make a great breakfast for the whole family. Wholemeal wraps filled with warmed Wattie’s Baked Beanz, scrambled eggs, fresh spinach, avocado and grated cheese with the option to serve with a simple homemade salsa.
½ cup 410g Wattie's Corn Whole Kernels No Added Salt or Sugar
1 medium tomato, diced
¼ small red onion, finely chopped
Juice of ½ a lemon
Handful fresh coriander leaves, chopped
Wraps :
300g Wattie's Baked Beanz
4 eggs
¼ cup milk
4 wholemeal tortillas
1 cup spinach
1 avocado, sliced
½ cup grated cheese

Step 1
To make the salsa: Bring a medium frying pan to medium-high heat. Cook the corn for 4-5 minutes or until tender. Mix the cooked corn, tomato, red onion, lemon juice and coriander together. Season to taste with salt and pepper. Set aside.
Step 2
Heat the Wattie's Baked Beanz in the microwave or a saucepan until heated through.
Step 3
Whisk together the eggs and milk in a bowl. Season with salt and pepper. Heat a dash of oil in a large frying pan over medium heat and cook the eggs to your liking.
Step 4
Warm the tortillas according to the packet instructions.
Step 5
Place the spinach in the centre of each tortilla. Top with the warmed baked beans, scrambled eggs, avocado and grated cheese. Fold in the sides of the wrap and roll to enclose the filling.
